Post workout lunch is tuna salad ✽1 can light tuna, 1/2 tbsp mustard, 1/4 of an avocado mashed, red onion, dried cranberries✽ over a bed of chard, baby kale and spinach with roasted sweet potato and Brussels sprouts, quinoa, black beans and dressed with balsamic and red wine vinegar. If tuna isn’t your thing I think this would be really good with shrimp!
